Loaded Baked Potato

As some of you might know our family went 100% vegan for the month of January aka “veganuary” it was fun and a nice little challenge. We already do quite a bit of plant based meals in our house hold, but one solid month was kind of fun. Ok recipe time. Also let me mention that the twins devoured this dish!!!!! Ate every last morsel.

 

Recipe:

  • Large red potatoes
  • 1 box garbanzo beans
  • 1 cup chopped dark leafy greens of your choice (collard greens, kale or chard)
  • 1/2 cup baby portobello mushrooms chopped
  • 1 cup zucchini chopped in cubes
  • 1/4 cup red onion
  • 2 tbs kitehillcheese
  • 2 tbs fresh homemade chunky salsa
  • a few slices of marinated onions
  • a few slices of avocado

Baked potatoes: 

  • Pre-heat your oven to 400 degrees
  • Stab your potatoes a few times with a fork and rub them with olive oil & salt
  • Bake on a cookie sheet for about 20 minutes or until soft

Stuffing

  • 1 box or can of garbanzo beans (15 oz.)
  • drained & sautéed in a pan with a tsp of olive oil
  • & spices……1 tsb smoked paprika, 1 tsp garlic granules, salt & pepper
  • once cooked smash a little bit with a fork (for texture)

Greens, mushrooms & zucchini

  • sauté in 1 tsp olive oil until all soft
  • season with salt, pepper & onion powder (as much or as little as you like…I just dusted the veggies lightly with seasoning)

Homemade Pico

  • Chop all ingredients and place in a bowl and keep mixing
  • 4 vine ripe tomatoes
  • 1 small green bell pepper
  • 1 small red onion
  • 2 crushed & chopped cloves of garlic
  • 1-2 jalepenos (seeds removed if you don’t want it too spicy)
  • Juice from 1 large lime
  • 1 head of cilantro chopped fine
  • 1 tsp olive oil
  • salt & pepper to taste BOOM

Marinated onions: all in one bowl (inspired by Teri from nocrumbsleft-(nocrumbsleft.net) go check out her blog it’s amazing)

  • 1 small red onion sliced thinly
  • 1/4-1/2 cup of olive oil
  • 1/4 cup red wine vinegar
  • 1-2 tbs apple cider vinegar
  • 1 tsp dried oregano & 1/2 tsp garlic powder or fresh minced garlic

let marinate on the counted top for at least an hour or so before using. I let it sit out on my kitchen counter for about 4 days (Teri says only let them sit out for 2 days)

Directions:

  • Bake your potatoes (once baked cut a cross on top and pinch sides together so potato opens up….you can also use a fork)
  • Cook your two different potato stuffings (look above) and set them aside.
  • NOW START BUILDING YOUR MASSIVE LOADED POTATO-You can fill it however you’d like just make sure all items get loaded on top of your potato.

 

BUILD

  1. Potato
  2.  Garbonzo meat
  3. sauteed veggies
  4. Pico
  5. kitehill chive cheese
  6. slices fresh avocado
  7. topped with marinated onions
  8. DONE!
